JOB SUMMARY: The Lead Dishwasher/Steward assists the Executive Chef and Supervisors in the performance of stewarding duties and assumes full responsibly in their absence. Aids in the scheduling and assigning of stewards ensuring there is proper coverage on each shift. Ensures the highest levels of cleanliness are maintained in each food service outlet and in the back of the house, at the beginning, during and at the end of the shift.
ESSENTIAL JOB FUNCTIONS:
- Ensures stewarding staff prepares tableware for washing through hands on training, i.e. scrapes plates, pre-soaks silverware, places all items to be washed in their proper racks, washes dishes, stacks and stores china in the appropriate kitchen areas.
- Trains staff on proper dish machine functions, i.e. set up, break down, cleaning techniques, detergent levels and ensures proper temperatures are being maintained.
- Ensures all soiled pots are collected washed and restacked on shelves, soaked and cleaned as needed.
- Responsible for all removal of garbage and refuse, properly get containers cleaned and sanitized. Mops and sweeps floors.
- Sanitizes all cooking equipment.
- Ensures all safety procedures are being followed.
- Acts as a role model to other employees.
- Always presenting oneself as a credit to Caesars, encouraging others to do the same. Meets the attendance guidelines of the job and adheres to regulatory, departmental and company policies. Maintain all stewarding equipment and tools.
- Cleaned and in good working condition.
- Daily assignment of workstations, cleaning assignments, special projects and lunch breaks.
QUALIFICATIONS:
- High school diploma or GED is required.
- Self-starter having speed and accuracy in order to maintain efficiency.
- Open minded to change and innovative on how to do things better.
- Enthusiastic and Pro-Active with regards to the department job(s) and responsibilities.
- Must be able to direct staff by effectively communicating responsibilities and assignments.
- Must be able to get along with co-workers and work as a team.
- Always present a well-groomed appearance.
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:
- Must be able to maneuver to all areas of the kitchen and food service areas.
- Must be able to tolerate areas with temperatures in excess of 115 degrees near dish machine. Must be able to operate the dish machine. Must be able to lift up to 100 pounds.
- Must be able to push carts, pull, bend, stoop and stack racks of dishes and silverware.
- Must be able to work at a fast pace and in stressful situations. Must be able to read, write, speak and understand English.
- Must be able to respond to visual and aural cues.
